For the Grilled Tenderloin:

1.5 lbs beef tenderloin

2 tbsp olive oil

2 tsp garlic powder

2 tsp onion powder

1 tsp smoked paprika

Salt and pepper, to taste

Fresh herbs (rosemary or thyme) for garnish

For the Creamy Dill Sauce:

1 cup sour cream

1/4 cup mayonnaise

2 tbsp fresh dill, chopped (or 2 tsp dried dill)

1 tbsp lemon juice

1 tsp Dijon mustard

Salt and pepper, to taste

Instructions
 

Prepare the Tenderloin:

    - Start by removing any silverskin from the beef tenderloin if not already done. Pat the tenderloin dry with paper towels.

      - In a small bowl, mix together the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a marinade.

        - Rub the marinade all over the tenderloin ensuring an even coating. Let it marinate for at least 30 minutes at room temperature, or refrigerate for up to 4 hours for more depth of flavor.

          Make the Creamy Dill Sauce:

            - In a mixing bowl, combine sour cream, mayonnaise, chopped dill, lemon juice, Dijon mustard, salt, and pepper.

              - Whisk together until smooth and creamy. Adjust seasoning if necessary. Chill in the refrigerator for at least 20 minutes to let the flavors meld.

                Preheat the Grill:

                  - Preheat your grill to high heat (about 450°F or 230°C). Make sure grates are clean and oiled to prevent sticking.

                    Grill the Tenderloin:

                      - Once the grill is ready, place the tenderloin directly over the heat. Sear on all sides for about 3-4 minutes per side until a nice crust forms.
