1 medium head of cauliflower (about 4 cups riced)

1 large egg

1 cup shredded mozzarella cheese (or dairy-free cheese alternative)

1/4 cup grated Parmesan cheese (optional)

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for a spicy kick)

Olive oil spray (for greasing)

Prep the Cauliflower: Begin by preheating your oven to 425°F (220°C). Remove the leaves and stem from the cauliflower and cut it into smaller florets. Use a food processor to pulse the cauliflower florets until they resemble rice (about 4 cups). If you don't have a food processor, you can use a box grater.

    Cook the Cauliflower Rice: Transfer the riced cauliflower to a microwave-safe bowl and cover it with a microwave-safe lid or plate. Microwave on high for about 5-6 minutes, or until soft. Let it cool for a few minutes.

      Remove Excess Moisture: Once cooled, place the cooked cauliflower in a clean kitchen towel or cheesecloth and wring out as much moisture as possible. This step is crucial to prevent a soggy crust.

        Mix the Dough: In a large mixing bowl, combine the riced cauliflower, egg, shredded mozzarella, optional Parmesan, garlic powder, oregano, salt, black pepper, and red pepper flakes. Mix until well combined.

          Shape the Crust: Line a baking sheet with parchment paper and lightly spray it with olive oil. Transfer the cauliflower mixture to the baking sheet and press it into a circular shape, about 1/4 inch thick.

            Bake the Crust: Place the crust in the preheated oven and bake for 25-30 minutes, or until golden brown and slightly crisp along the edges. Keep an eye on it to prevent burning.

              Add Toppings: Remove the crust from the oven and let it cool slightly. Top with your favorite sauce, cheese, and veggies of choice. Return to the oven for an additional 10-15 minutes, until the cheese is melted and bubbly.
