Ingredients

1 medium head of cauliflower (about 4-5 cups riced)

1/2 cup shredded mozzarella cheese (fresh or part-skim)

1/4 cup grated parmesan cheese

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

Freshly ground black pepper to taste

Optional: 1/4 teaspoon crushed red pepper flakes for a spicy kick

Instructions

Prepare the Cauliflower: Preheat your oven to 400°F (200°C). Remove the stems and leaves from the cauliflower and cut it into florets. Pulse florets in a food processor until you achieve a rice-like consistency.

Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl. Cover and microwave on high for about 5-7 minutes, until tender. Let it cool slightly.

Extract Moisture: Once cooled, place the cauliflower into a clean kitchen towel or cheesecloth. Twist and squeeze out any excess moisture until it feels dry. This step is crucial to prevent a soggy crust.

Combine Ingredients: In a large mixing bowl, combine the riced and dried cauliflower, mozzarella cheese, parmesan cheese, beaten egg, garlic powder, onion powder, oregano, salt, and black pepper. Mix until everything is well incorporated.

Form the Crust: Line a baking sheet with parchment paper. Transfer the cauliflower mixture to the center and press it down into a round pizza shape (about 1/4 inch thick) with a slight edge for a crust. Ensure it's tightly packed.

Bake the Crust: Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and firm to the touch.

Add Toppings: Once baked, remove the crust from the oven. Add your favorite sauces, cheeses, and toppings (low-calorie options like fresh veggies, lean meats, or light cheese work well).

Final Bake: Return the topped pizza to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.

Serve: Once done, let the pizza rest for a couple of minutes before slicing. Serve hot and enjoy your guilt-free treat!
