Ingredients

1 ripe avocado, peeled and pitted

1/2 cup unsweetened cocoa powder

1/4 cup pure maple syrup (or honey/agave for sweetness)

1 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup dark chocolate chips (dairy-free if desired)

Optional toppings: shredded coconut, chopped nuts, cacao nibs, or cocoa powder

Instructions

Prep the Avocado: In a medium mixing bowl, use a fork or a hand mixer to mash the ripe avocado until smooth and creamy. Ensure there are no lumps for a silky texture.

Combine Ingredients: To the mashed avocado, add the unsweetened cocoa powder, maple syrup, vanilla extract, and sea salt. Blend until all ingredients are fully incorporated and the mixture is smooth and shiny.

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 30-second intervals, stirring after each interval until completely melted and smooth. Alternatively, you can use a double boiler.

Mix Chocolate: Once melted, allow the chocolate to cool for a minute before adding it to the avocado mixture. Stir well to combine.

Chill the Mixture: Refrigerate the mixture for about 30 minutes to firm it up. This will make rolling the truffles easier.

Form the Truffles: Once chilled, use a small cookie scoop or your hands to portion out the mixture and roll it into 1-inch balls.

Coat the Truffles: Roll each truffle in your choice of toppings: shredded coconut, chopped nuts, cacao nibs, or just sprinkle with cocoa powder. Make sure they are well coated.

Set & Store: Place the coated truffles on a parchment-lined tray and refrigerate for another 15-20 minutes to set.

Serve: Enjoy these delicious guilt-free truffles right away or store them in an airtight container in the refrigerator for up to a week!
