Ingredients

1 scoop vanilla protein powder (whey or plant-based)

2 tablespoons almond flour

1 tablespoon cocoa powder (optional for chocolate flavor)

1/2 teaspoon baking powder

1/4 teaspoon sea salt

1 tablespoon unsweetened applesauce (or mashed banana)

2 tablespoons almond milk (or any milk of choice)

1 teaspoon maple syrup or honey (optional for sweetness)

1 tablespoon dark chocolate chips (optional)

A sprinkle of cinnamon (optional)

Instructions

In a microwave-safe mug, combine the vanilla protein powder, almond flour, cocoa powder (if using), baking powder, and sea salt. Mix well with a fork to ensure there are no lumps.

Add the applesauce, almond milk, and maple syrup to the dry ingredients. Stir until you have a smooth batter, making sure to scrape the sides of the mug.

If desired, fold in the dark chocolate chips and a pinch of cinnamon for added flavor.

Microwave the mug on high for 1 minute and 30 seconds. Keep an eye on it to prevent overflow. If not fully cooked, add additional 10-second bursts until the center is set but still moist.

Let the mug cake cool for a minute before enjoying directly from the mug, or invert it onto a plate. Top with additional chocolate chips, a dollop of Greek yogurt, or fresh fruit if desired.
