1 medium zucchini, grated (about 1 cup)

1 cup almond flour

1/2 cup unsweetened cocoa powder

1/2 cup maple syrup or honey

1/4 cup unsweetened applesauce

1/4 cup coconut oil, melted

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped walnuts (optional)

Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Prepare Zucchini: Grate the zucchini and then use a clean kitchen towel or cheesecloth to wring out excess moisture, which helps prevent the brownies from becoming too wet.

      Mix Wet Ingredients: In a large mixing bowl, combine the melted coconut oil, maple syrup (or honey), applesauce, eggs, and vanilla extract. Whisk together until well combined.

        Combine Dry Ingredients: In a separate bowl, mix the almond flour, cocoa powder, baking powder, baking soda, and salt. Stir until evenly distributed.

          Combine Mixtures: Gradually fold the dry ingredients into the wet mixture. Be careful not to overmix. Gently fold in the grated zucchini, chocolate chips, and walnuts (if using).

            Pour Batter: Pour the batter evenly into the prepared baking pan, smoothing the top with a spatula.

              Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.

                Cool: Allow the brownie bars to cool in the pan for about 10 minutes. Use the parchment paper to lift them out of the pan and let them cool completely on a wire rack.

                  Slice & Serve: Once cooled, slice into bars. Enjoy them as a guilt-free treat or keep them in an airtight container for up to one week!
