1 cup fresh or frozen corn kernels

1/2 cup Hatch green chiles, chopped (mild or hot, based on preference)

1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon smoked paprika

Salt and pepper to taste

1 cup panko breadcrumbs

1/4 cup fresh cilantro, chopped (optional)

Cooking spray or oil for frying

Preheat the Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    Prepare the Filling: In a mixing bowl, combine the corn kernels, chopped Hatch chiles, cream cheese, cheddar cheese, Parmesan cheese, garlic powder, smoked paprika, salt, and pepper. Stir until the mixture is smooth and well-combined.

      Form the Poppers: Using your hands, scoop about 1 tablespoon of the mixture and form it into small balls or patties. Make sure they are packed tightly.

        Coat the Poppers: Place panko breadcrumbs in a shallow dish. Roll each popper in the breadcrumbs until evenly coated. This will add a delicious crunch when cooked.
