8 Hawaiian rolls, sliced in half

4 large eggs

1 cup whole milk

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon brown sugar

¼ teaspoon salt

2 tablespoons unsalted butter

½ cup fresh pineapple, diced (for topping)

½ cup shredded coconut (toasted)

Prepare the Egg Mixture: In a large bowl, whisk together the eggs, milk, vanilla extract, cinnamon, brown sugar, and salt until well combined. Set aside.
