1/2 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 1/2 cups rolled oats

1/2 cup unsweetened shredded coconut

1/2 cup chopped nuts (e.g., almonds or walnuts)

1/2 cup dark chocolate chips (optional)

1 teaspoon cinnamon

1/4 teaspoon sea salt

Prep the pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal.

    Mix wet ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), melted coconut oil, and vanilla extract. Stir until smooth and fully incorporated.

      Combine dry ingredients: In another bowl, mix the rolled oats, shredded coconut, chopped nuts, cinnamon, and sea salt. Make sure everything is well mixed.

        Blend wet and dry: Gradually add the dry mixture to the wet mixture, stirring until fully combined. If you’re using chocolate chips, you can fold them in at this point.
