2 cups rolled oats

1 cup grated carrots (about 2 medium carrots)

½ cup almond butter (or peanut butter)

¼ cup honey or maple syrup

½ cup unsweetened applesauce

1 tsp vanilla extract

1 tsp cinnamon

½ tsp baking powder

¼ tsp salt

½ cup raisins or dried cranberries (optional)

¼ cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving a bit of an overhang for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the almond butter, honey (or maple syrup), applesauce, and vanilla extract. Whisk until smooth and well blended.

      Prepare Dry Ingredients: In another bowl, mix the rolled oats, grated carrots, cinnamon, baking powder, and salt. If you're adding raisins and nuts, include them in this dry mixture as well.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture. Stir until just combined and the oats are fully coated.

          Transfer to Baking Pan: Pour the mixture into your prepared baking pan, spreading it evenly and pressing it down firmly with a spatula or your hands. This ensures they hold together after baking.
