Healthy Chicken & Avocado Pasta Salad

8 oz whole grain or gluten-free pasta (fusilli or penne)

1 lb boneless, skinless chicken breasts

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ red onion, finely chopped

¼ cup fresh cilantro, chopped (or parsley)

¼ cup feta cheese, crumbled (optional)

3 tbsp olive oil

1 tbsp lemon juice

1 tsp garlic powder

Salt and pepper to taste

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the whole grain pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and garlic powder. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side or until cooked through and golden brown. Remove from heat, let cool slightly, then chop into bite-sized pieces.

      Make the Dressing: In a small bowl, whisk together the remaining olive oil, lemon juice, salt, and pepper to taste.

        Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chicken, diced avocados, cherry tomatoes, cucumber, red onion, and cilantro.

          Dress the Salad: Pour the dressing over the pasta salad and gently toss everything together until well combined. If desired, add crumbled feta cheese on top.
