Healthy Chicken Taco Casserole

2 cups cooked, shredded chicken breast

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 cup diced tomatoes (fresh or canned, with juices)

1 ½ cups quinoa, rinsed

2 cups low-sodium chicken broth

1 cup shredded low-fat cheddar cheese

2 tablespoons taco seasoning (store-bought or homemade)

1 teaspoon cumin

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

½ cup chopped bell pepper (any color)

1 avocado, diced (for topping)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Salt and pepper, to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, and sauté for about 5 minutes until softened. Add the minced garlic and sauté for an additional 1 minute, until fragrant.

      Combine Ingredients: In a large mixing bowl, add the shredded chicken, black beans, corn, diced tomatoes, quinoa, sautéed vegetables, taco seasoning, cumin, and chicken broth. Season with salt and pepper to taste, and mix well.

        Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.

          Cover and Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

            Add Cheese and Uncover: After 30 minutes, carefully remove the foil and sprinkle the shredded cheddar cheese over the top. Return the casserole to the oven, uncovered, and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

              Cool and Serve: Remove the casserole from the oven and let it cool for about 5 minutes. Top with diced avocado and chopped cilantro before serving. Serve with lime wedges on the side.
