Ingredients

1 cup rolled oats

1 ripe banana, mashed

1 cup almond milk (or any milk of choice)

1 tablespoon cocoa powder (unsweetened)

1 teaspoon baking powder

1 teaspoon vanilla extract

1 tablespoon honey or maple syrup (optional for sweetness)

1/4 teaspoon salt

1/2 cup dark chocolate chips (or dairy-free if preferred)

Olive oil or coconut oil for cooking

Instructions

Blend Oats: In a blender, add the rolled oats and blend until they reach a flour-like consistency. This oat flour will be the base for our pancakes.

Combine Ingredients: In a mixing bowl, combine the blended oat flour, mashed banana, almond milk, cocoa powder, baking powder, vanilla extract, optional sweetener, and salt. Mix until all the ingredients are well incorporated and a smooth batter forms.

Add Chocolate Chips: Gently fold in the dark chocolate chips into the batter. This will add decadence and touch of sweetness to your pancakes.

Heat the Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with olive or coconut oil.

Cook Pancakes: Pour about 1/4 cup of pancake batter onto the hot skillet for each pancake. Cook for about 2-3 minutes or until bubbles start to form on the surface.

Flip and Finish: Flip the pancakes and cook for another 2-3 minutes until golden brown. Repeat with the remaining batter, adding more oil to the skillet as needed.

Serve: Stack the pancakes on a plate and serve warm. Top with extra banana slices, a drizzle of maple syrup or honey, and a sprinkle of chocolate chips for an extra treat!
