Ingredients

1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups cooked brown rice or quinoa

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1 cup baby spinach or mixed greens

½ red onion, thinly sliced

1/2 cup feta cheese, crumbled

Fresh parsley or dill for garnish

For the Tzatziki Sauce:

1 cup plain Greek yogurt

1/2 cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon fresh lemon juice

1 tablespoon fresh dill or mint, chopped

Salt and pepper to taste

Instructions

Prepare the Chicken Marinade: In a bowl, whisk together the olive oil, oregano, garlic powder, onion powder, smoked paprika, salt, and pepper. Add the chicken breasts and coat thoroughly. Cover and marinate for at least 30 minutes or overnight for maximum flavor.

Cook the Chicken: Heat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side or until fully cooked (the internal temperature reaches 165°F). Remove from heat and let rest for a few minutes before slicing.

Make the Tzatziki Sauce: In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, chopped dill (or mint), salt, and pepper. Stir until well combined. Adjust seasoning to taste and refrigerate until ready to serve.

Assemble the Bowls: In each serving bowl, start with a base of cooked brown rice or quinoa. Top with sliced chicken, cherry tomatoes, cucumber, bell pepper, spinach, red onion, and crumbled feta cheese.

Drizzle and Garnish: Spoon dollops of tzatziki sauce over the top of each bowl and garnish with fresh parsley or dill.

Serve and Enjoy: Enjoy these nutritious and vibrant Greek chicken bowls fresh, or enjoy them for meal prep by storing in the refrigerator for up to 4 days.
