2 cans (5 oz each) tuna packed in water, drained

1/4 cup Greek yogurt (plain or flavored)

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/2 cup diced cucumber

1/4 cup diced red bell pepper

1/4 cup finely chopped red onion

1/4 cup chopped fresh parsley

Salt and pepper to taste

8 large leaf romaine or butter lettuce leaves

Optional toppings: sliced avocado, cherry tomatoes, or olives

Instructions
 

Prepare the Tuna Mixture: In a large mixing bowl, combine the drained tuna, Greek yogurt, Dijon mustard, and lemon juice. Mix until well combined.

    Add Veggies: Stir in the diced cucumber, red bell pepper, red onion, and parsley. Season with salt and pepper to taste. Mix well to ensure the veggies are evenly distributed.
