1 medium zucchini, grated (about 1 cup)

1 cup whole wheat flour

1/2 cup rolled oats

1/2 cup almond flour

1/2 cup coconut sugar (or raw sugar)

1/4 cup honey or maple syrup

1/2 cup unsweetened applesauce

2 large eggs

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

1/2 cup raisins or dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan or an 8x8 inch baking dish with parchment paper.

    Prepare the Zucchini: Rinse and grate the zucchini, ensuring you remove any excess moisture by gently squeezing it in a clean kitchen towel or paper towel.

      Mix Dry Ingredients: In a large mixing bowl, combine the whole wheat flour, rolled oats, almond flour, baking soda, baking powder, ground cinnamon, nutmeg, and salt. Whisk these dry ingredients together until evenly mixed.

        Combine Wet Ingredients: In another bowl, whisk together the honey (or maple syrup), applesauce, eggs, and vanilla extract until smooth. Stir in the grated zucchini.

          Combine Mixtures: Gradually fold the wet ingredients into the dry ingredients. Mix until just combined; avoid overmixing. If using, gently fold in the chopped walnuts and raisins or dark chocolate chips.

            Bake the Cake: Pour the batter into the prepared baking dish, smoothing the surface with a spatula. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

              Cool Down: Once baked, remove from the oven and let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
