Hearty Beef Barley Soup

1 lb (450g) beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

2 medium carrots, diced

2 stalks celery, diced

1 cup (150g) mushrooms, sliced

1 cup (190g) pearl barley

6 cups (1.5 liters) beef broth

1 can (14.5 oz) diced tomatoes, with juices

2 bay leaves

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Season the cubed beef with salt and pepper. Add the beef to the pot in batches, browning it on all sides. Remove the beef and set aside.

    Sauté Vegetables: In the same pot, add the diced onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften. Add the minced garlic and sliced mushrooms, cooking for another 3–4 minutes until the mushrooms are tender.

      Combine Ingredients: Return the browned beef to the pot. Stir in the pearl barley, diced tomatoes (with their juice), beef broth, bay leaves, dried thyme, and smoked paprika. Bring the mixture to a boil.

        Simmer the Soup: Once boiling, reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked through, stirring occasionally.

          Final Seasoning: Taste and adjust seasoning with additional salt and pepper as desired. Remove the bay leaves before serving.

            Serve and Garnish: Ladle the soup into bowls and sprinkle with fresh parsley for a pop of color and flavor. Serve hot with crusty bread on the side.
