Hearty Chicken and Sweet Potato Casserole

Ingredients
  

2 cups cooked chicken, shredded or diced

2 large sweet potatoes, peeled and diced

1 cup yellow onion, diced

2 cloves garlic, minced

1 cup broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup chicken broth

¼ cup milk

½ cup Greek yogurt or sour cream

½ cup panko breadcrumbs

2 tablespoons fresh parsley, chopped (for garnishing)

Instructions
 

Preheat the oven to 400°F (200°C).

    In a large pot, add the diced sweet potatoes and enough water to cover them. Bring to a boil and cook for 10 to 15 minutes or until fork-tender. Drain and set aside.

      In a large skillet, heat olive oil over medium heat. Sauté the diced onion for about 4-5 minutes until translucent, then add minced garlic and cook for another minute until fragrant.

        In a large mixing bowl, combine the shredded chicken, cooked sweet potatoes, sautéed onion and garlic, broccoli florets, chicken broth, milk, Greek yogurt, smoked paprika, thyme, salt, and pepper. Stir until everything is well combined.

          Transfer the mixture into a greased 9x13 inch casserole dish. Spread it evenly to ensure even baking.

            Sprinkle the shredded cheddar cheese over the top of the casserole, followed by an even layer of panko breadcrumbs for added crunch.

              Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbling and the top is golden brown.

                Once out of the oven, let it sit for 5 minutes to set. Garnish with fresh parsley before serving.
