1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

3 large eggs

1 cup buttermilk

⅓ cup vegetable oil (or melted butter)

1 cup diced cooked ham

1 cup shredded cheddar cheese (or a mix of your favorite cheeses)

¼ cup chopped green onions (optional)

½ cup chopped bell pepper (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease or line a muffin tin with paper liners.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder until well combined.

      Combine Wet Ingredients: In a separate bowl, beat the eggs, then stir in the buttermilk and vegetable oil until mixed.

        Combine Dry and Wet Mixtures: Create a well in the center of the dry ingredients, then pour in the wet mixture. Gently stir until just combined. Do not overmix.

          Fold in Add-Ins: Carefully fold in the diced ham, shredded cheese, and any optional ingredients (green onions and bell peppers) until evenly distributed in the batter.

            Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full.

              Bake: Place in the preheated oven and bake for 18-22 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
