1 cup green or brown lentils, rinsed and drained

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 bell pepper (red or yellow), diced

1 medium zucchini, diced

1 cup diced tomatoes (canned or fresh)

4 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried oregano

1 bay leaf

Salt and pepper, to taste

2 cups spinach or kale, roughly chopped

Juice of 1 lemon

Fresh parsley, chopped (for garnish)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until softened. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add the Vegetables: Stir in the diced carrots, celery, bell pepper, and zucchini. Sauté for another 5-7 minutes, stirring occasionally, until the vegetables begin to soften.

      Incorporate Lentils and Tomatoes: Add the rinsed lentils and diced tomatoes to the pot. Stir well to combine all the ingredients for about 1 minute.
