1 lb ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), chopped

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon salt (more to taste)

1/4 teaspoon black pepper

1 tablespoon olive oil

1/2 cup corn (fresh, frozen, or canned)

Fresh cilantro (for garnish)

Optional toppings: shredded cheese, sour cream, avocado

Instructions
 

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and bell pepper and sauté for about 3-4 minutes until soft. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

    Brown the Turkey: Add the ground turkey to the pot. Cook, breaking it apart with a wooden spoon, until fully browned, approximately 5-6 minutes. Make sure to drain any excess fat if necessary.

      Add Spices: Sprinkle in the chili powder, cumin, smoked paprika, salt, and black pepper. Stir to coat the turkey and vegetables with the spices for about 1-2 minutes, allowing the flavors to meld.

        Combine the Ingredients: Pour in the diced tomatoes (with juices), both types of beans, and the corn. Stir everything well to combine, then bring to a gentle simmer.
