For the Dough:

3 ½ cups all-purpose flour

1 packet (2 ¼ tsp) instant yeast

½ cup warm milk (110°F / 43°C)

¼ cup granulated sugar

½ cup unsalted butter, melted

2 large eggs

1 tsp salt

For the Filling:

½ cup unsalted butter, softened

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon fresh parsley, chopped

½ teaspoon salt

¼ teaspoon black pepper

For the Topping:

1 egg, beaten (for egg wash)

Optional: coarse sea salt and additional herbs for garnish

Instructions
 

Prepare the Dough: In a large mixing bowl, combine 3 cups of the flour, instant yeast, and sugar. In another bowl, whisk together the warm milk, melted butter, and eggs. Pour the wet ingredients into the dry ingredients and stir until combined.

    Knead the Dough: Add in the remaining ½ cup of flour and salt. Knead the dough on a lightly floured surface for about 8-10 minutes, or until it is smooth and elastic.

      First Rise: Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place until it doubles in size, about 1 hour.

        Make the Filling: In a small bowl, combine the softened butter with minced garlic, rosemary, thyme, parsley, salt, and black pepper until well blended.

          Roll out the Dough: Once the dough has risen, punch it down and turn it out onto a lightly floured surface. Roll it out into a rectangle about ½ inch thick.

            Spread the Filling: Evenly spread the herb and garlic mixture over the dough rectangle, leaving a small border around the edges.

              Form the Rolls: Starting from one of the long edges, carefully roll the dough into a tight log. Pinch the seams to seal it.

                Slice the Rolls: Cut the rolled dough into 12 equal pieces. Place them cut-side up in a greased baking dish, leaving a little space between each roll.

                  Second Rise: Cover the dish with a towel and let the rolls rise again in a warm place for about 30 minutes, or until they puff up.

                    Preheat the Oven: Preheat your oven to 350°F (175°C).

                      Brush with Egg Wash: Once the rolls have risen, brush the tops with beaten egg. Sprinkle with coarse sea salt and additional herbs if desired.

                        Bake: Bake in the preheated oven for 25-30 minutes or until golden brown and cooked through.

                          Cool and Serve: Let the rolls cool for a few minutes in the baking dish before transferring them to a wire rack. Serve warm and enjoy!
