Herbed Ricotta Stuffed Chicken Rolls

4 boneless, skinless chicken breasts

1 cup ricotta cheese

½ cup grated Parmesan cheese

1 cup fresh spinach, chopped

2 tbsp fresh basil, finely chopped

2 tbsp fresh parsley, finely chopped

1 garlic clove, minced

Salt and pepper, to taste

1 tsp lemon zest

½ tsp red pepper flakes (optional)

1 cup marinara sauce

2 tbsp olive oil

Toothpicks or kitchen twine

Instructions
 

Prep the Chicken: Preheat your oven to 375°F (190°C). Carefully slice each chicken breast horizontally, creating a pocket but not cutting all the way through. Season the outside of each breast with salt and pepper.

    Make the Filling: In a medium bowl, combine the ricotta cheese, grated Parmesan, chopped spinach, basil, parsley, minced garlic, lemon zest, and red pepper flakes. Mix until well blended and season with salt and pepper to taste.

      Stuff the Chicken: Spoon a generous amount of the ricotta mixture into each chicken breast pocket. Use toothpicks or kitchen twine to secure the opening, ensuring the filling remains inside.

        Sear the Chicken: Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken rolls and sear for about 3-4 minutes on each side, until golden brown.

          Add the Sauce: Pour the marinara sauce over the chicken rolls, making sure they are well covered.

            Bake: Transfer the skillet to your preheated oven and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

              Rest and Serve: Once done, remove from the oven and let the rolls rest for 5 minutes. Serve drizzled with additional marinara sauce, and garnish with fresh herbs if desired.
