1 cup low-fat cottage cheese

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1 large egg

1 cup almond flour

1 cup vital wheat gluten

1 teaspoon dried oregano

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon red pepper flakes (optional)

1/2 cup sliced pepperoni

1/2 cup marinara sauce (for dipping)

Salt and pepper to taste

Olive oil spray

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix Cheeses and Egg: In a large bowl, combine the cottage cheese, shredded mozzarella, grated parmesan, and the egg. Mix until well combined and smooth.

      Add Dry Ingredients: Add the almond flour, vital wheat gluten, dried oregano, garlic powder, onion powder, red pepper flakes (if using), salt, and pepper to the cheese mixture. Stir until a dough begins to form.

        Knead the Dough: Transfer the dough to a floured surface. Knead for about 2-3 minutes until the dough is smooth and elastic. If the dough is sticky, add a little more almond flour.

          Roll Out the Dough: Roll the dough into a large rectangle, about 1/4-inch thick.

            Add Toppings: Evenly distribute the sliced pepperoni over the dough, leaving a small border around the edges.

              Roll the Pizza: Starting from one side, carefully roll the dough tightly into a log shape. Pinch the edges to seal.

                Slice into Rolls: Using a sharp knife, slice the log into 1-inch thick rolls and place them cut-side up on the prepared baking sheet.

                  Spray and Bake: Lightly spray the tops of the rolls with olive oil to enhance browning. Bake in the preheated oven for 15-20 minutes, or until golden brown.

                    Serve: Allow the rolls to cool for a few minutes, then serve warm with marinara sauce for dipping.
