1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

2 cups diced potatoes (skin on for added nutrition)

1 cup frozen mixed vegetables (like peas, corn, and carrots)

1 can (15 oz) diced tomatoes (with juice)

1 cup beef broth (or vegetable broth)

1 tsp Worcestershire sauce

1 tsp dried Italian herbs (basil, oregano, thyme)

1/2 tsp salt

1/4 tsp black pepper

1 cup shredded cheddar cheese (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, a heat a few teaspoons of oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

      Stir in minced garlic and cook for an additional minute, until fragrant.

        Add the ground beef or turkey to the skillet, breaking it apart with a spatula. Cook until browned, approximately 5-7 minutes. Drain any excess fat.

          In a large mixing bowl, combine the cooked meat mixture with diced potatoes, frozen mixed vegetables, canned diced tomatoes (with juice), beef broth, Worcestershire sauce, Italian herbs, salt, and pepper. Mix until everything is evenly coated.

            Transfer the mixture into a greased 9x13 baking dish, spreading it out evenly.

              Cover with aluminum foil and bake in the preheated oven for 35-40 minutes, or until the potatoes are tender.

                Remove the foil carefully and sprinkle shredded cheddar cheese on top (if using). Return to the oven and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.

                  Garnish with chopped parsley before serving.
