For the Chicken & Gravy:

2 cups cooked chicken, shredded or diced

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup heavy cream

1/2 cup all-purpose flour

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon garlic powder

1 teaspoon onion powder

2 teaspoons dried thyme

Salt and pepper to taste

2 tablespoons olive oil

For the Biscuit Topping:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk

1/2 cup shredded cheddar cheese (for added cheesiness)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Chicken and Gravy:

      - In a large skillet, heat olive oil over medium heat. Add onions and sauté until they become transparent, about 4 minutes.

        - Stir in the minced garlic and cook for an additional 1-2 minutes, until fragrant.

          - Sprinkle in the flour and mix well to form a roux. Cook for about 1 minute.

            - Slowly pour in the chicken broth while whisking to prevent lumps. Add the heavy cream and bring the mixture to a simmer, stirring occasionally until it thickens, about 5-7 minutes.

              - Stir in the shredded chicken, cheddar cheese, garlic powder, onion powder, thyme, salt, and pepper. Mix until well combined and remove from heat.

                Make the Biscuit Dough:

                  - In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

                    - Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

                      - Pour in the buttermilk and mix gently until a soft dough forms. Fold in the shredded cheddar cheese.

                        Assemble the Bake:
