Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cups broccoli florets

8 ounces fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

2 cloves garlic, minced

¼ teaspoon nutmeg (optional)

Fresh parsley, chopped for garnish

Instructions

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side or until the chicken is fully cooked and golden brown. Once cooked, remove from the skillet and let it rest for a few minutes. Then slice the chicken into strips.

Cook the Broccoli: In the same skillet, add the broccoli florets and sauté for 3-4 minutes until they are bright green and tender-crisp. Remove and set aside with the chicken.

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water before draining the pasta, then set the pasta aside.

Make the Alfredo Sauce: In the same skillet used for chicken and broccoli, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and reduce the heat to medium-low, stirring continuously. Add the Parmesan cheese and nutmeg (if using), and let the sauce simmer gently, allowing it to thicken for about 3-5 minutes.

Combine Ingredients: Once the sauce has thickened, add the cooked fettuccine to the skillet, tossing it in the sauce until well coated. If the sauce is too thick, gradually add some reserved pasta water until you reach your desired consistency. Add the sautéed broccoli and sliced chicken, gently mixing everything together to combine.

Serve: Divide the Chicken Alfredo with Broccoli among plates, garnish with freshly chopped parsley, and add extra Parmesan if desired. Enjoy your creamy, homemade meal!
