8 oz (about 2 cups) rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1/4 cup sliced black olives (optional)

1/4 cup feta cheese, crumbled

1/2 cup fresh parsley, chopped

For the Honey Dijon Dressing:

1/4 cup olive oil

2 tablespoons honey

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

Salt and pepper, to taste

Cook the Pasta: In a large pot of salted boiling water, cook the rotini pasta according to the package instructions until al dente, usually about 8-10 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, cucumber, red bell pepper, and red onion. If using, slice the black olives and crumble the feta cheese.

      Make the Dressing: In a small bowl, whisk together the olive oil, honey, Dijon mustard, and apple cider vinegar until well combined. Season with salt and pepper to taste.

        Combine the Ingredients: In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, feta cheese, and fresh parsley.
