Honey Lime Chicken Fajitas

1 lb boneless, skinless chicken breasts, sliced into thin strips

1 red bell pepper, sliced

1 green bell pepper, sliced

1 red onion, sliced

3 tablespoons honey

3 tablespoons lime juice (freshly squeezed is best)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper, to taste

8 small flour or corn tortillas

Optional toppings: avocado, fresh cilantro, sour cream, or cheese

Instructions
 

Marinate the Chicken: In a medium bowl, whisk together honey, lime juice, olive oil, minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Add the sliced chicken and toss to coat. Cover and let marinate in the refrigerator for at least 30 minutes or up to 2 hours for more flavor.

    Prepare the Vegetables: While the chicken is marinating, slice the red and green bell peppers and red onion. Set aside.

      Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken (reserve the marinade) to the skillet and cook for about 5-7 minutes until the chicken is golden brown and cooked through. Use a meat thermometer; the internal temperature should reach 165°F (74°C). Remove the chicken from the skillet and set aside.

        Sauté the Vegetables: In the same skillet, add a little more olive oil if needed, then toss in the sliced bell peppers and onions. Sauté for about 5 minutes until they’re tender and slightly caramelized. Pour the reserved marinade into the skillet, stirring to combine with the veggies for an additional 2 minutes.

          Combine: Return the cooked chicken to the skillet, and toss it together with the sautéed vegetables, allowing everything to heat through for another 2-3 minutes.

            Warm the Tortillas: In a separate dry skillet, warm the tortillas over medium heat for about 30 seconds on each side or until pliable.

              Serve: To serve, place a generous portion of the honey lime chicken and vegetables onto each tortilla. Add your choice of toppings like avocado, cilantro, sour cream, or cheese. Roll up the tortillas or fold them for easy eating!
