1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1/2 cup honey

1/4 cup Dijon mustard

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1 cup panko breadcrumbs

Fresh parsley, chopped, for garnish (optional)

Lemon wedges, for serving

Prepare the Marinade: In a bowl, whisk together the honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring each piece is well-coated. Cover and let it marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

        Coat the Chicken: Remove the chicken from the marinade, allowing excess marinade to drip off. Place the panko breadcrumbs in a shallow dish. Coat each chicken piece in the breadcrumbs, pressing firmly to adhere.
