Ingredients

For the Chicken:

1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 tablespoon hot sauce (optional for extra heat)

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

Vegetable oil (for frying)

For the Hot Honey:

½ cup honey

1 tablespoon red pepper flakes (adjust to taste)

1 tablespoon apple cider vinegar

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

1 teaspoon salt

½ cup unsalted butter, cold and cut into cubes

¾ cup buttermilk

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk and hot sauce. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

Prepare the Hot Honey: In a small saucepan over low heat, combine honey, red pepper flakes, and apple cider vinegar. Stir well and allow to heat gently for about 5-7 minutes until warmed through. Do not let it boil. Remove from heat and set aside.

Make the Biscuits: Preheat your oven to 425°F (220°C). In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Stir in the buttermilk just until combined; be careful not to overmix.

Shape the Biscuits: Turn the dough onto a floured surface and knead gently 3-4 times. Pat the dough to about 1-inch thickness and use a round biscuit cutter to cut out biscuits. Place them on a baking sheet lined with parchment paper.

Bake the Biscuits: Bake in the preheated oven for 12-15 minutes, or until golden brown on top. Remove from the oven and allow to cool slightly.

Fry the Chicken: In a large skillet, heat vegetable oil to 350°F (175°C). Dredge each marinated chicken thigh in the seasoned flour mixture, shaking off the excess. Fry the chicken in batches for about 5-7 minutes on each side or until golden brown and cooked through (internal temperature of 165°F). Drain on paper towels.

Assemble the Biscuits: Slice the baked biscuits in half and place a piece of fried chicken on the bottom half. Drizzle generously with the hot honey and cover with the top half of the biscuit.

Serve: Serve warm, and enjoy the delightful combination of sweet and spicy flavors!
