Ingredients

1 lb boneless, skinless chicken thighs

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for extra heat)

1/2 cup hot honey (store-bought or homemade)

2 cups cooked brown rice or quinoa

1 cup roasted broccoli florets

1 cup cherry tomatoes, halved

1 avocado, sliced

1/4 cup fresh cilantro, chopped

Lime wedges for serving

Instructions

Marinate the Chicken: In a bowl, combine the chicken thighs with olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).

Cook the Chicken: Preheat a large skillet over medium-high heat. Add the marinated chicken thighs and cook for about 5-7 minutes on each side, or until a nice golden-brown crust forms and the chicken is cooked through (internal temperature should reach 165°F).

Add Hot Honey: In the last 2 minutes of cooking, drizzle hot honey over the chicken, allowing it to caramelize slightly and create a sticky glaze. Make sure to coat the chicken well for maximum flavor.

Prepare the Bowls: While the chicken is cooking, prepare the base of the bowls. Divide the cooked brown rice or quinoa equally among four bowls.

Add Toppings: Top each bowl with roasted broccoli, cherry tomatoes, and slices of avocado.

Slice and Assemble: Once the chicken is done, remove it from the skillet and let it rest for a couple of minutes before slicing it into strips. Arrange the sliced chicken over the bowls.

Garnish and Serve: Drizzle any remaining hot honey from the pan over the chicken. Sprinkle fresh cilantro on top and serve with lime wedges on the side for an extra zesty kick.
