Jalapeño Peach Grilled Cheese

2 slices of sourdough bread

1 cup shredded sharp cheddar cheese

1 cup fresh peaches, sliced (about 1 medium peach)

1-2 jalapeños, thinly sliced (adjust based on desired heat)

2 tablespoons unsalted butter, softened

1 tablespoon honey

Salt, to taste

Fresh basil leaves (optional, for garnish)

Prepare the Jalapeños: If you prefer a milder flavor, remove the seeds and membranes from the jalapeños. For more heat, leave them as is. Slice them thinly.

    Prepare the Peaches: Wash and slice the fresh peaches. If desired, you can lightly grill the peach slices for added flavor.

      Assemble the Sandwich: Spread a thin layer of softened butter on one side of each slice of sourdough bread. On the unbuttered side of one slice, layer half of the cheddar cheese, followed by the peach slices, jalapeño slices, and the remaining cheese. Top with the second slice of bread, buttered side up.

        Grill the Sandwich: Preheat a skillet over medium heat. Carefully place the sandwich in the skillet. Grill for about 3-4 minutes or until the bread is golden brown and crispy. Flip it carefully and grill the other side for another 3-4 minutes until all the cheese has melted and the bread is nicely toasted.

          Drizzle with Honey: Once done, remove the grilled cheese from the skillet, and drizzle the honey over the top (you can also add salt to taste for a flavor boost). Let it sit for a minute before slicing.

            Serve: Cut the sandwich in half, garnish with fresh basil leaves if desired, and serve immediately to enjoy the melty goodness of the cheese with the sweetness of peaches and the kick of jalapeños.
