2 slices of sourdough bread

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

1 ripe peach, thinly sliced

1 small jalapeño, seeds removed and finely sliced

1 tablespoon honey

1 tablespoon olive oil

Salt and pepper, to taste

Fresh basil leaves (optional, for garnish)

Prepare the Peach and Jalapeño Mix: In a small bowl, combine the thinly sliced peaches with the jalapeño slices. Drizzle with honey and mix gently. Season with a pinch of salt and pepper.

    Assemble the Sandwich: Spread a layer of softened cream cheese on one side of each slice of sourdough bread. On the cream cheese side of one slice, layer half of the grated cheddar cheese, followed by the peach and jalapeño mixture, and then top with the remaining cheddar. Finally, place the second slice of bread on top, cream cheese side down.

      Heat the Skillet: In a large skillet, heat the olive oil over medium heat until it shimmers.

        Grill the Sandwich: Carefully place the assembled sandwich into the skillet. Cook for about 3-4 minutes on one side, or until golden brown, pressing down gently with a spatula to ensure even cooking.

          Flip and Cook: Flip the sandwich over and continue to grill for another 3-4 minutes, or until both sides are perfectly crispy and the cheese has melted.
