2 cups cooked chicken, shredded

1/2 cup cream cheese, softened

1/2 cup mayonnaise

1/2 cup shredded cheddar cheese

2 jalapeños, diced (remove seeds for less heat)

1/4 cup green onions, chopped

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/4 cup crispy bacon, crumbled (optional)

Lettuce leaves, for serving

Instructions
 

Prepare the Chicken: If not using pre-cooked chicken, boil or grill chicken breasts until fully cooked. Let cool and then shred.

    Mix the Base: In a large mixing bowl, combine the softened cream cheese and mayonnaise. Use a hand mixer or spatula to blend them until smooth and creamy.

      Add the Chicken: Fold the shredded chicken into the cream cheese and mayonnaise mixture, ensuring it’s evenly coated.

        Incorporate the Flavors: Add the shredded cheddar cheese, diced jalapeños, chopped green onions, lime juice, garlic powder, onion powder, salt, and pepper. Stir until well combined.

          Add the Bacon: If you’re using bacon, fold in the crumbled crispy bacon for added texture and flavor.

            Chill the Salad: Cover and refrigerate the chicken salad for at least 30 minutes to allow the flavors to meld together.

              Serve: Once chilled, serve the Jalapeno Popper Keto Chicken Salad on a bed of fresh lettuce leaves or in an avocado half for an extra low-carb treat.
