4 medium russet potatoes, peeled and thinly sliced

1 cup jalapeños, diced (fresh or pickled, seeds removed for less heat)

8 oz cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1 cup shredded pepper jack cheese

1/2 cup crispy bacon bits (optional, for extra flavor)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1 cup Panko breadcrumbs

2 tablespoons olive oil

Fresh cilantro or green onions, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the thinly sliced potatoes and cook for about 5-7 minutes until just tender but not fully cooked. Drain and set aside.

      Make the Creamy Mixture: In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth, then stir in the diced jalapeños, half of the cheddar cheese, half of the pepper jack cheese, bacon bits (if using), garlic powder, onion powder, and salt and pepper. Mix until well combined.

        Layer the Casserole: In a greased 9x13-inch baking dish, layer half of the potato slices on the bottom. Spread half of the creamy jalapeño mixture over the potatoes. Repeat with the remaining potatoes and creamy mixture.

          Add Cheese Topping: Sprinkle the remaining cheddar and pepper jack cheese on top of the casserole.

            Prepare the Breadcrumb Topping: In a small bowl, mix the Panko breadcrumbs with olive oil, salt, and pepper. Sprinkle this mixture evenly over the cheese layer.

              Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown and the potatoes are fully cooked.

                Garnish and Serve: Once cooked, remove the casserole from the oven and let it cool for a few minutes. Garnish with chopped cilantro or green onions before serving.
