1 lb sirloin steak, cut into bite-sized cubes

4 tablespoons unsalted butter, divided

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme)

Salt and pepper to taste

1 tablespoon olive oil

1 tablespoon soy sauce (optional for extra umami)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Steak: Pat the steak cubes dry with paper towels. This will help to achieve a nice sear. Season generously with salt and pepper.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat until it's shimmering.

      Sear the Steak: Add the steak bites to the skillet in a single layer, being careful not to overcrowd them. Sear for about 2-3 minutes on each side, or until they are browned to your liking. If cooking in batches, remove cooked steak bites and keep them warm while cooking the remaining.

        Make the Garlic Butter Sauce: In the same skillet, reduce the heat to medium-low. Add the butter and let it melt, scraping up any browned bits from the bottom of the pan.

          Add Garlic and Herbs: Once the butter is melted, add the minced garlic, rosemary, and thyme. Sauté for roughly 1-2 minutes, stirring frequently to prevent the garlic from burning. If using soy sauce, add it to the pan during this step.
