For the Meatballs:

1 lb ground beef (or a mix of beef and pork)

1/4 cup panko breadcrumbs

1/4 cup finely chopped green onions (scallions)

2 cloves garlic, minced

1/4 cup soy sauce

1 tbsp sesame oil

1 tbsp brown sugar

1 tsp ginger, minced

1 tsp black pepper

1 egg, lightly beaten

1 tbsp rice vinegar

Sesame seeds, for garnish

For the Spicy Mayo Dip:

1/2 cup mayonnaise

2 tbsp Sriracha (adjust based on spice preference)

1 tsp sesame oil

1 tsp lime juice

1 tsp honey (optional, for sweetness)

Chopped green onions, for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Mix Meatball Ingredients: In a large mixing bowl, combine the ground beef, panko breadcrumbs, green onions, garlic, soy sauce, sesame oil, brown sugar, ginger, black pepper, egg, and rice vinegar. Mix until just combined—do not overmix, as this can make the meatballs tough.

      Form Meatballs: Shape the mixture into meatballs about 1 inch in diameter. Place them on a lined baking sheet, evenly spaced apart.

        Bake the Meatballs: Bake in the preheated oven for about 20-25 minutes, or until the meatballs are cooked through and browned on the outside.

          Prepare the Spicy Mayo Dip: In a small bowl, combine the mayonnaise, Sriracha, sesame oil, lime juice, and honey. Mix well until smooth and creamy. Adjust the Sriracha according to your spice preference.

            Garnish: Once the meatballs are out of the oven, sprinkle them with sesame seeds and extra chopped green onions for a fresh taste.
