Ingredients

1 medium zucchini (about 1 cup grated)

1 cup all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup vegetable oil

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chocolate chips (optional)

1/2 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Prepare the Zucchini: Wash and grate the zucchini. Squeeze out excess moisture using a clean kitchen towel or cheesecloth. Set aside.

Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, rolled oats, baking soda, cinnamon, and salt. Set aside.

Combine Wet Ingredients: In a large mixing bowl, whisk together the vegetable oil, brown sugar, granulated sugar, egg, and vanilla extract until smooth and well combined.

Incorporate Zucchini: Add the grated zucchini to the wet mixture, stirring until evenly mixed.

Combine Dry and Wet Mixtures: Gradually add the dry mixture into the wet mixture, folding gently until just combined. Do not overmix. If using, fold in the chocolate chips and nuts.

Scoop the Cookies: Use a tablespoon or a cookie scoop to drop rounded tablespoons of the dough onto the prepared baking sheet, leaving enough space between each cookie to allow for spreading.

Bake: Bake in the preheated oven for 12-15 minutes or until the edges are golden and the centers look set.

Cool: Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Enjoy: Once cooled, enjoy your Lazy Sunday Zucchini Cookies with a glass of milk or your favorite beverage!
