Lemon Basil Chicken Couscous Jars

Ingredients
  

1 cup couscous

1 1/4 cups water or low-sodium chicken broth

1 pound boneless, skinless chicken breasts

2 tablespoons olive oil

Juice and zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried oregano

Salt and pepper, to taste

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1/2 cup fresh basil leaves, roughly chopped

1/4 cup feta cheese, crumbled (optional)

Instructions
 

Cook the Couscous: In a medium saucepan, bring the water or chicken broth to a boil. Once boiling, remove from heat, add the couscous, cover, and let it sit for 5 minutes. Fluff with a fork and set aside to cool.

    Prepare the Chicken: In a small bowl, mix together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Place the chicken breasts in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes.

      Cook the Chicken: Preheat a grill or skillet over medium heat. Remove chicken from the marinade and cook for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes before slicing.

        Assemble the Jars: In clean, dry mason jars, layer the ingredients as follows:

          - Start with a layer of cooled couscous (about 1/3 of the jar).

            - Add a layer of sliced chicken (1 chicken breast per jar).

              - Then layer the cherry tomatoes, cucumber, red onion, and chopped basil.

                - If desired, sprinkle feta cheese on top of each jar.

                  Seal and Store: Seal the jars tightly and store them in the refrigerator for up to 3 days. When ready to eat, shake the jar to mix the ingredients or pour into a bowl for a fresh salad display.

                    Enjoy: These jars can be enjoyed cold straight from the fridge, or you can warm the chicken and couscous in the microwave for 1-2 minutes before adding the fresh veggies.
