4 boneless, skinless chicken breasts (about 1.5 pounds)

Salt and black pepper, to taste

1/2 cup all-purpose flour

4 tablespoons olive oil, divided

4 tablespoons unsalted butter, divided

1 cup low-sodium chicken broth

1/2 cup fresh lemon juice (about 2-3 lemons)

1/2 cup capers, rinsed and drained

2 cloves garlic, minced

1/4 cup fresh parsley, chopped (for garnish)

Lemon slices (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts on both sides with salt and pepper. Dredge each piece in flour, shaking off the excess.

    Sear the Chicken: In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken breasts and cook for about 4-5 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F (75°C). Remove the chicken from the skillet and set aside.

      Make the Sauce: In the same skillet, add the remaining 2 tablespoons of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant. Then, add the chicken broth, lemon juice, and capers. Stir to combine, scraping the bottom of the pan to release any browned bits.

        Reduce the Sauce: Bring the sauce to a simmer and allow it to reduce for about 5-7 minutes, or until it thickens slightly.

          Add Butter for Richness: Reduce the heat to low, then stir in the remaining 2 tablespoons of butter until melted and well combined.

            Return Chicken to the Pan: Place the cooked chicken breasts back into the skillet, spooning the sauce over the top. Let them heat through for a minute.
