Ingredients
  

4 salmon fillets (about 6 oz each)

4 tablespoons unsalted butter, melted

2 lemons (1 sliced, 1 for juice)

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

1 cup cherry tomatoes, halved

1 cup asparagus, trimmed

1 cup baby spinach

Instructions
 

Preheat your grill or oven to 400°F (200°C).

    Cut four pieces of aluminum foil, each around 12 inches long, and lay them flat on a workspace.

      Place a salmon fillet in the center of each foil piece. Season each fillet with salt and pepper to taste.

        In a small bowl, mix together the melted butter, juice of one lemon, minced garlic, oregano, and thyme. Drizzle this mixture evenly over the salmon fillets.

          Layer the cherry tomatoes and asparagus around the salmon fillets. Top each pack with lemon slices and a handful of baby spinach.

            Fold the sides of the foil over the salmon and vegetables, creating a tight seal to lock in the steam and flavors. Make sure it’s well sealed to prevent any leaks.

              Place the foil packs on the grill or in the oven. Cook for about 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.

                Carefully open the foil packs (watch out for steam!) and garnish with freshly chopped parsley before serving.
