Lemon Dill Salmon Patties

Ingredients
  

2 cans (14.75 oz each) of pink salmon, drained and flaked

1 cup of breadcrumbs (panko or regular)

1/4 cup fresh dill, chopped (or 2 tablespoons dried dill)

1/2 cup green onion, finely chopped

1 large egg

2 tablespoons lemon juice

Zest of 1 lemon

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

3 tablespoons olive oil (for frying)

Optional: Fresh lemon wedges for serving

Instructions
 

In a large bowl, combine the flaked salmon, breadcrumbs, dill, green onion, egg, lemon juice, lemon zest, garlic powder, salt, and black pepper. Gently mix until everything is well combined.

    Form the mixture into patties, about 2-3 inches in diameter and 1 inch thick. You should get approximately 8-10 patties.

      Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, carefully place half of the patties in the skillet. Cook for about 4-5 minutes on one side until golden brown.

        Flip the patties and add the remaining tablespoon of olive oil if needed. Cook for another 4-5 minutes on the other side, until they are cooked through and have a nice crust.

          Remove the patties and place them on a plate lined with paper towels to absorb any excess oil. Repeat the cooking process with the remaining patties.

            Serve warm with fresh lemon wedges on the side for an extra burst of citrus flavor. Enjoy your delicious lemon dill salmon patties!
