Lemon Garlic Chicken Thighs with Veggies

4 bone-in, skin-on chicken thighs

3 tablespoons olive oil

4 cloves garlic, minced

1 lemon (zest and juice)

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

1 bell pepper (any color), sliced

1 medium zucchini, sliced into half-moons

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    In a large bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Add the chicken thighs to the mixture and toss to coat well. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.

      Preheat the Oven:

        Preheat your oven to 400°F (200°C).

          Prepare the Veggies:

            In a separate bowl, toss the sliced bell pepper, zucchini, and cherry tomatoes with a drizzle of olive oil, salt, and pepper. Set aside.

              Sear the Chicken:

                Heat a large oven-safe skillet over medium-high heat. Remove the chicken thighs from the marinade, letting excess liquid drip off. Place the chicken thighs skin-side down in the hot skillet. Sear for about 5 minutes or until the skin is golden brown and crispy.

                  Add the Veggies:

                      Roast in the Oven:

                        Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the veggies are tender.

                            Remove the skillet from the oven and let it rest for a few minutes. Garnish with fresh chopped parsley before serving.
