1 lb chicken tenders

1 cup breadcrumbs (panko preferred for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

Zest of 1 lemon

2 tablespoons fresh lemon juice

2 large eggs

1/4 cup all-purpose flour

Olive oil spray (or oil for frying)

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Start by preheating your oven to 400°F (200°C) if baking. Rinse and pat dry the chicken tenders.

    Marinade the Chicken: In a bowl, mix the lemon juice, garlic powder, onion powder, paprika, black pepper, and lemon zest. Add the chicken tenders to the marinade, toss to coat, and let them sit for at least 15-20 minutes (or refrigerate for up to 2 hours for more flavor).

      Set Up Dredging Station: On a shallow plate, combine the breadcrumbs, grated Parmesan cheese, and additional spices (if desired). In another plate, place the all-purpose flour, and in a separate bowl, beat the eggs until smooth.

        Dredge the Chicken: Take each marinated chicken tender and first coat it in flour, shaking off excess, then dip into the beaten eggs, and finally press into the breadcrumb mixture, ensuring an even coating.

          Cook the Chicken: For baking, place the coated chicken tenders on a greased baking sheet and lightly spray them with olive oil. Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through. For frying, heat about 1-2 inches of oil in a pan over medium heat and fry the tenders for about 4-5 minutes on each side until golden and crispy.
