Lemon Garlic Roasted Potatoes and Green Beans

1.5 pounds baby potatoes, halved

8 ounces fresh green beans, trimmed

4 cloves garlic, minced

1 lemon (zested and juiced)

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional: Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 425°F (220°C).

    Prepare the Marinade: In a small bowl, combine the minced garlic, lemon zest, lemon juice, olive oil, oregano, thyme, salt, and black pepper. Mix well to create a marinade.

      Toss the Potatoes: In a large mixing bowl, add the halved baby potatoes. Pour half of the marinade over the potatoes and toss well to ensure they are evenly coated.

        Roast the Potatoes: Spread the potatoes in a single layer on a large baking sheet, cut side down. Roast in the preheated oven for about 25 minutes.

          Prepare the Green Beans: While the potatoes are roasting, place the green beans in a mixing bowl and toss them with the remaining marinade.

            Combine and Roast: After the potatoes have roasted for 25 minutes, remove the baking sheet from the oven. Add the marinated green beans to the baking sheet, making sure they are evenly spread out.

              Continue Roasting: Return the baking sheet to the oven and roast for an additional 15-20 minutes, or until the potatoes are golden brown and fork-tender, and the green beans are slightly crisp.

                Garnish and Serve: Once done, remove from the oven and let cool for a couple of minutes. Garnish with freshly chopped parsley and serve with lemon wedges on the side for an extra zesty kick.
