At the heart of this recipe is the salmon fillet, a staple in many kitchens due to its rich flavor and numerous health benefits. Salmon is an excellent source of Omega-3 fatty acids, which are known for their heart-healthy properties. These fats help reduce inflammation, lower blood pressure, and can even improve brain function. When selecting salmon, look for wild-caught varieties whenever possible, as they tend to have higher levels of Omega-3s and lower levels of contaminants compared to farmed salmon. Freshness is key, so opt for fillets that have a vibrant color and a clean, ocean-like smell.

Ingredients

4 salmon fillets (about 6 ounces each)

4 tablespoons olive oil

4 cloves garlic, minced

Juice and zest of 2 large lemons

1 teaspoon Dijon mustard

1 teaspoon honey

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried rosemary)

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper, to taste

Lemon slices, for garnish

Fresh parsley, chopped, for garnish

Instructions

Preheat the oven: Start by preheating your oven to 400°F (200°C).

Prepare the marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, Dijon mustard, honey, rosemary, thyme, salt, and black pepper until well combined.

Marinate the salmon: Place the salmon fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the salmon, ensuring each fillet is well coated. Let it marinate in the refrigerator for at least 20 minutes (or up to 2 hours for more flavor).

Arrange for roasting: Line a baking sheet with parchment paper or aluminum foil. Place the marinated salmon fillets skin-side down on the baking sheet. Pour any leftover marinade over the top of the fillets.

Roast the salmon: Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.

Garnish and serve: Once done, remove the baking sheet from the oven. Transfer the salmon to a serving platter, garnish with lemon slices and chopped fresh parsley. Serve hot with your choice of sides, such as steamed asparagus or quinoa.
