Ingredients

2 ripe avocados

1 cup cooked salmon, flaked (canned or freshly cooked)

2 tablespoons cream cheese, softened

1 tablespoon Greek yogurt

1 tablespoon fresh lemon juice

1 clove garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon capers, rinsed and chopped

Salt and pepper to taste

Lemon wedges, for garnish

Fresh dill sprigs, for garnish

Instructions

Prepare the Salmon Mixture: In a medium mixing bowl, combine the flaked salmon, cream cheese, Greek yogurt, lemon juice, minced garlic, chopped dill, and capers. Mix until thoroughly combined and creamy. Season with salt and pepper to taste.

Prepare Avocados: Slice the avocados in half and remove the pits. Using a spoon, gently scoop out a little bit of the flesh to create more room for the filling, being careful not to break the skin.

Stuff the Avocados: Generously spoon the lemon garlic salmon mixture into the hollowed-out avocado halves, making sure to fill each one well.

Garnish: Serve the stuffed avocados on a plate. Garnish with additional lemon wedges and fresh dill sprigs for a pop of color and extra flavor.

Serve: Enjoy immediately as a refreshing and nutritious meal or appetizer!
