Lemon Garlic Shrimp and Spinach Bowls

1 lb large shrimp, peeled and deveined

3 cups fresh spinach, washed

4 cloves garlic, minced

1 lemon (juiced and zested)

1/4 cup olive oil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

1 cup cooked quinoa or brown rice (optional for serving)

Fresh parsley (for garnish)

Instructions
 

Marinate the Shrimp: In a mixing bowl, combine the shrimp with half of the olive oil, minced garlic, lemon juice, lemon zest, red pepper flakes, salt, and pepper. Allow to marinate for about 15-20 minutes to let the flavors meld.

    Cook the Shrimp: Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp (discard any excess marinade) and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.

      Sauté the Spinach: In the same skillet, add the remaining olive oil. Once heated, add the fresh spinach and sauté for about 1-2 minutes until just wilted. Season lightly with salt and pepper.
