Lemon Garlic Shrimp with Spinach Rice

For the Lemon Garlic Shrimp:

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

1/4 cup unsalted butter

2 tbsp olive oil

Zest and juice of 1 large lemon

1/2 tsp red pepper flakes (adjust to taste)

Salt and black pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

For the Spinach Rice:

1 cup long-grain white rice

2 cups low-sodium vegetable broth

2 cups fresh spinach, chopped

2 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

Salt and pepper to taste

Juice of 1/2 lemon

Instructions
 

Prepare the Spinach Rice:

    - In a medium saucepan, heat 2 tbsp of olive oil over medium heat.

      - Add the chopped onion and sauté until translucent, about 3-4 minutes.

        - Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

          - Add the rice, stirring to coat it with the oil and onion mixture for about 1 minute.

            - Pour in the vegetable broth, season with salt and pepper, and bring to a boil.

              - Reduce the heat to low, cover, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.

                - Once done, stir in the chopped spinach and lemon juice. Fluff with a fork and set aside.

                  Cook the Lemon Garlic Shrimp:

                    - In a large skillet, heat the butter and olive oil over medium heat until melted and bubbling.

                      - Add the minced garlic and red pepper flakes, sautéing for about 1 minute until golden.

                        - Increase the heat to medium-high and add the shrimp. Season with salt and black pepper.

                          - Cook for 2-3 minutes, flipping the shrimp halfway through, until they're pink and opaque.

                            - Pour in the lemon juice and zest, tossing the shrimp in the sauce for an additional minute.

                              Assembly:

                                - Serve the lemon garlic shrimp over a bed of spinach rice, drizzling any remaining sauce over the top.

                                  - Garnish with fresh parsley for an extra pop of color.
